peanut sauce
- â…“ cup creamy peanut butter
- 2 tablespoons rice vinegar
- 2 tablespoons reduced-sodium tamari or soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoons toasted sesame oil (Mimi didn’t add bc it’s already oily enough from the peanut butter)(no! add it!)
- 2 cloves garlic, pressed or minced
- 2 to 3 tablespoons water, as needed
1 tablespoon of lemon or lime juice (optional but recommended)
some kind of noodle. soba, buckwheat, or wheat noodles work best.
- veggies to stir fry (carrots, broccoli, pepper, jalapeño...)
- green onion/sesame seeds/cilantro for toppings
directions mix all the ingredients together in bowl. add small amounts of water between stirs to reduce thickness. sauté veggies like broccoli, bell pepper, carrot, chili pepper... cook noodles. should be enough sauce for about 4 servings, then add to pan with vegggies. pour sauce over, mix, and serve with toppings :)
